Dra. Ana C. Pinheiro
Ana C. Pinheiro holds a degree in Chemical and Biological Engineering (5 years program) (2007) and a PhD in Chemical and
Biological Engineering (Food Technology) (2013) by University of Minho (Portugal). She worked as a post-doc researcher at
Instituto de Biologia Experimental e Tecnologica (Oeiras, Portugal) and Centre of Biological Engineering (CEB) of University
of Minho (Braga, Portugal) between 2014 and 2019. She is currently a Junior Researcher at CEB. She has published over 51
peer-reviewed papers, 6 book chapters and more than 66 abstracts in national and international conferences. She has
dedicated her research activity to topics related with nanostructures for food applications, in particular to the
development of nanostructures for the incorporation and controlled release of bioactive compounds, to the evaluation of
their in vitro behaviour, and to the development of artificial gastrointestinal models. She is also the Principal Investigator of
the FCT project «NanoMaxiSafe: Functionalized nanostructured delivery systems for food applications: strategies to maximize
bioactive compounds’ bioavailability and their safety evaluation». She has teaching experience (Invited Assistant Professor at
Department of Biological Engineering, University of Minho) and is currently co-supervising various PhD and master thesis.
